You're Going to Want to Try This... Fast, Hearty, and Healthy Soup Recipe!

It's officially fall, ya'll, and you know what that means - it's soup season! 

This is a recipe my mom used to make when I was little so it's not only delicious and healthy, it's also nostalgic. 

I'm a big fan of soup recipes that don't involve a whole lot of fuss. This one should only take you about 10 minutes to prep, and about 20 minutes to cook.

Here are the details...

Ingredients: 

  • 2 boxes of chicken stock or bone broth
  • 1 can of diced tomatoes 
  • 1 can of black beans (rinsed)
  • 1 green bell pepper chopped
  • 1 small white onion chopped
  • 1-2 tablespoons garlic  
  • 1 cup uncooked spiral or small shell pasta 
  • 1 jar mild/medium red salsa 
  • 1 lb ground turkey 
  • 2 teaspoons chili powder 
  • Salt & pepper to taste 
  • Shredded cheddar cheese (for topping) 

Directions: 

  • In a large pot, saute the garlic and onion until the onion is translucent. Add the ground turkey and cook through (drain if necessary). Add the broth, tomatoes, salsa, green pepper, chili powder, and black beans, and salt and pepper. Bring to a boil, stirring occasionally. 
  • Add the pasta, cover, and simmer for 15-20 minutes or until pasta is tender. Garnish with shredded cheese. 
  • Bonus tip.. consider doubling this recipe and freezing it to eat another time!
