No Bake Almond Butter Bites

Who doesn’t love an oaty, sweet, nutty bite of flavor? These Almond Butter Bites are the perfect little night-cap to end the day if you’re craving something sweet. Have one after dinner, or pack a couple for a snack.

Ingredients:

1 cup old fashioned rolled oats
¼ cup semi-sweet chocolate chunks or chips
¼ cup unsweetened coconut
3 tablespoons ground flax seed
½ cup natural almond butter
4 tablespoons honey
¼ teaspoon vanilla extract

To Make:

Combine all of the ingredients in a medium sized bowl. Roll into 1 inch size balls. Place the bites on a baking sheet and put in the fridge until they fully set and cool - roughly 30 minutes to 1 hour. Place in airtight container or ziplock bag. Store in the fridge or freezer. Enjoy 1-2 as a sweet treat!

If you find the dough is a bit sticky, prior to rolling the dough, you can cover the bowl and refrigerate the dough for 20 minutes.
