Easy Weeknight Dinner - Egg Roll in a Bowl

Weeknights are busy, ya'll. I don't know about you, but I'm definitely looking for quick, easy dinners to turn to. 

Trust me when I say that this is the one that you're going to want to keep on rotation. It's packed full of nutrient dense foods, it's so quick and easy to make, and it's got a powerful flavor punch you're going to love.

This is going to take you less than 15 minutes to make - pretty great, huh? If you do like it, consider doubling the recipe next time! Let me know what you think. 


  • 1 pound ground turkey (or beef) 
  • 2 tablespoons minced garlic 
  • 6 green onions, sliced 
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce or coconut aminos
  • 8 oz can of water chestnuts, chopped 
  • 1 14-oz bag of coleslaw mix (or chop your own!)
  • Salt and pepper to taste 
  • Sesame seeds (as garnish - optional) 


Heat sesame oil in a large skillet and place over medium heat. Add white parts of green onions (setting aside green ends for garnish), and garlic. Saute, stirring frequently. 

Add ground turkey and water chestnuts, and cook until meal is browned. Add coleslaw mix, soy sauce or coconut aminos, salt and pepper, and stir until well combined. Cook, stirring regularly, until cabbage is tender. 

Serve warm, sprinkle green onions and sesame seeds on top. 

Other notes: 

Add volume by adding a second bag of cabbage. For a more carb-dense meal, add a serving of jasmine rice or quinoa. Top with sriracha if you like it a little spicy!
